There’s something so comforting about a bowl of warm porridge in the morning. This one’s a favourite of mine – creamy oats simmered with oat milk, chia seeds, and blueberries until thick and slightly jammy, then topped with fresh pear, crunchy walnuts, a drizzle of peanut butter, and a touch of agave syrup. It’s simple, cosy, and nourishing – the perfect way to start the day.
Ingredients
- 50 g oats
- 240 ml oat milk (or any milk of your choice)
- 15 g chia seeds
- 75 g frozen blueberries
- Pinch of salt
- ½ ripe pear, sliced
- 30 g walnuts, roughly chopped
- 15 g peanut butter
- 1 tbsp agave syrup (honey or maple syrup also work)
Method
- In a small saucepan, combine the oats, chia seeds, blueberries, oat milk, and a pinch of salt.
- Cook over medium heat for about 5-7 minutes, stirring occasionally, until the oats are creamy and the blueberries have softened into the porridge. Add a splash more milk if needed for your desired consistency.
- Pour the porridge into a bowl and top with sliced pear, walnuts, a spoonful of peanut butter, and a drizzle of agave syrup.
- Serve warm and dig in – perfect for slow mornings or a quick weekday breakfast.
Tips & Variations
- Swap the blueberries for raspberries, blackberries, or any other frozen or fresh fruits.
- Use almond butter or hazelnut butter instead of peanut butter for a twist.
- If prepping ahead, make a bigger batch and store it in the fridge for up to 3 days – just reheat with a little extra milk.
