Banana chia pancakes

These banana chia pancakes are soft, naturally sweet, and perfect for meal prep or a nourishing weekend breakfast. Made with oats, ripe bananas, and chia seeds, they’re easy to make and packed with fibre to help keep you full.

 

 

Ingredients (for about 16 pancakes)

    • 150 g oats
    • 3 ripe bananas
    • 4 eggs
    • 200 g flour
    • 2 tsp baking powder
    • ¼ cup (40 g) chia seeds
    • ¼ cup (80 g) maple syrup
    • 1 tbsp olive oil, for cooking

Method

  1. Add the oats, bananas, eggs, flour, baking powder, chia seeds, and maple syrup to a blender and blend until smooth to form the batter.
  2. Heat a little olive oil in a non-stick pan over medium heat.
  3. Spoon portions of the batter into the pan to form your pancakes.
  4. Cook for around 1-2 minutes on the first side, until bubbles start to appear on the surface and the edges begin to set.
  5. Flip and cook for another 30 seconds to 1 minute on the other side, until golden and cooked through.
  6. Serve warm with your favourite toppings.

 

Tips & Variations

  • Use very ripe bananas for the best natural sweetness and flavour.
  • Add a splash of milk if the batter feels too thick.
  • These pancakes store well in the fridge and can also be frozen for an easy breakfast.
